countdown to thanksgiving – vegan pecan pie!

heyhey well i must of jinxed myself because right after my last post i lost electric again and just got it back on ugh! im over NY right nowww lol it went from a hurricane to this


a nice 4 inches by the afternoon, lovely.

on to more important things, pecan pie.. i was not always a fan of pecan pie actually for any kind of pie until a few years ago.  oh boy was i missing out now pies on the top of my list for favorite dessert.. after making countless amounts of pecan pies to finally find one thats the right texture taste and all that fun stuff i have found it. honestly i had so me gorgeous pies and then i would cut it and the filling would just pour out! though the soupy mess tasted good i would have probably cried if i had bought that to a party and that happened, thank god my taste tester friends werent to hard on me lol and most of the recipes call for corn syrup which i never use i dont think i would no where to buy it to be honest so i spent alot of $ and hours to make this so make sure you put this on your menu this thanksgiving because you wont be disappointed!

Vegan Pecan Pie

3/4 cup maple syrup

1/2 cup barley malt

4 tbs sesame tahini

2 tbs cornstarch

1 tsp cinnamon

3+1/4 cup pecans

1 pie crust of choice (i used whole foods whole wheat)

Preheat your oven at 350.  In a blender add all the ingredients except the pecans and pulse a few times until mixed.  Add 1/2 of the pecans (1.5cups+2tbs) to the blender and pulse 2 or 3 times just until chopped.  Now pour 3/4 of the mixture into the shell and add the other half of the pecans to the remaining mixture and pour that in shell to. ( i like to save 2tbs of the pecans and once its all in the shell i push them on top nicely) Bake for 45 minutes then cool completely before cutting.

* it bubbles as it bakes, mine has never gone over the sides but has happened to my friends, it does go back down once its out of the oven but maybe a cookie sheet underneath may help if there is any mess.  Also after its cool i like to just brush a little maple syrup on the top to give it a nice shine 🙂
