Hello All! Hope you enjoyed your weekend, mine went fast like always.. I figured with the dessert recipes I’ve given already I would add in a side dish to the thanksgiving countdown!
I love cornbread, sweet cornbread or savory it is just the best. I now make a cornbread stuffing to bring to thanksgiving along with the desserts i bring.. i look forward to it every year ! I like to make a sweeter cornbread because i like pairing it with savory options, there not overly sweet though, just enough!
1 cup maple syrup (i have used brown rice syrup for a less sweeter version thats really good)
1+1/4 cup milk ( i use soy and have used unsweetened almond)
1/4 cup oil
1.5 cups cornmeal
1/2 cup whole wheat pastry flour
1 teaspoon baking soda
Preheat oven to 400. Combine the wet and dry ingredients together in seperate bowls, then combine and mix just until its mixed evenly. Put in an oiled muffin tin and cook 25-30 minutes. Makes 12 muffins
1 cup chopped onion + 1 cup celery
1/2 tsp dried sage
1 tsp dried parsley
3 cups whole wheat bread cubed
2 cups cornbread cubed( i use 3 usually )
1-2 cups vegetable broth
1/4-1/2 cup pecans/walnuts (optional)
Preheat oven to 400. Combine celery and onion on a oiled skillet and saute for 3-4 minutes. Add the herbs and saute a minute or 2 longer. Combine breads and vegetable broth, add enough til its moistened not drenched. Stir in the nuts if your using. Put in a baking dish and bake 45-hour.
Get your chopping and mixing on and should look like this before putting it in the oven
its awesome with it, has a good enough kick but mellowed out by the cornbread
