Gooey Vegan Cinnamon Buns

I got about 15 emails just asking for my cinnamon bun recipe alone, even though its after christmas these are still the best breakfast or even dessert anytime of the year!

i use to liveeeee at cinnabun in the mall.. i worked right across from it at the spa there so everytime i would go to walk to food court the sweet cinnamon smell would make me forget whatever i was going to get and go straight there and get the biggest best sugar fat calorie laden cinnamon bun ever! i grew over that when i realized the whole thing is a days worth of sugar fat calories etc. i then started to experiment with recipes that wouldnt leave me on such a sugar high.. i have failed MANY times before coming across this recipe.. seriously some didnt rise, some rose too much they were erupting from the pan, once they tasted way to healthy that they had barely any taste, another time they were literally floating in the filling/icing.. man do i wish i had pics of these failures lol enjoy these !

Gooey Vegan Cinnamon Buns

1 packet of yeast

1 cup milk (i used unsweetened almond)

1.5 cups whole wheat pastry flour

1 cup all purpose flour

1 tbs baking powder

1/4 cup sugar ( i use sugar in the raw )

1/2 tsp cinnamon

1/4 cup unsweetened applesauce


1/2 cup sugar*

1 tbs+ 1/2 tsp cinnamon

2-3 tbs vegan butter (i used smart balance light)

Put your yeast in the milk (make sure its warm, not hot!) and set aside.  Combine the flours sugar, baking powder, and cinnamon in a bowl.  After the yeast and milk get a foamy look add the applesauce to it.  Then combine the flour mixture to the milk mixture until a dough forms.  Now you get your kneading on and you put your dough onto a floured surface and knead until its no longer sticky (adding 2tbs-1/4cup extra flour)**.  Roll dough into a rectangle and make the filling by mixing all the ingredients well then sprinkle it over the rolled dough.  Roll the dough up into a log and then cut it in 8-10 pieces.  Put in a pan and cover rolls with a towel in a warm place for 45 minutes**  Preheat oven to 350 and bake rolls for 25 minutes.

* I use raw sugar in the filling to but you can also use regular brown sugar.  I just like the crunch of the raw sugar.

** I use the dough hook of my kitchen aid here and add the flour as it goes until it doesn’t stick anymore.  Then roll it out on a floured surface.

*** I let the dough rise for half hour and the i put them in the fridge still covered in the towel for a day or 2 and then the morning im going to cook them i take them out for about a half hour to let rise then cook them.


Roll dough to a large rectange


Sprinkle on the filling.  I dont go to much toward the ends because your going to have alittle extra dough on the ends to cut off


Cut rolls and place in a pan enough apart because these boys will rise.  After 45 minutes cook and tadaaaaa


At the point you can make an icing by combining 1 cup of powdered sugar, 2 tbs melted cream cheese, 2 tbs milk and 1/2 tsp of vanilla extract in a bowl and pour it on top. I opted out this time because my fam isnt a huge fan of things to sweet, go figure ! ;-)!

    Those cinnamon rolls look amazing. They are a wonderful alternative to the pre-packaged cinnamon rolls. I’ll be making these for my nephews the next time they visit.

    Oh my gosh, I’m IN LOVE with Cinnabon. They seriously don’t have any in RI where I live, so it sucks. I only get to get one when I fly somewhere and they have one in the airport, haha. But I guess that’s probably a good thing 😉

    Cinnamon rolls are one of my favorite treats ever. I too get sucked in all the time at the mall when I walk by Cinnabon! I swear they have fans blowing out the delicious smell to entice people. Thanks for this recipe, it looks great!
