Ive been on such an eating out kick lately! Even if its just getting a salad i just have zero interest in cooking. I use to always get chinese takeout and would order either sesame chicken or chicken teriyaki, ugh was it good ! after becoming vegetarian id always get the tofu versions instead.. im trying to get my family to eat more vegetarian dishes and i know if i gave them tofu right off the bat they’d never let me cook for them again ! so i went with beans, chickpeas to be exact because they are just delicious and work great with this dish !
1 can chickpeas (drained/rinsed)
2 carrots (sliced)
2 celery stalks (chopped)
1 cup broccoli
2 cups brown rice, cooked
2 tbs almonds (optional)
1/4 cup water
1/4 cup soy sauce
1 tbs maple syrup
1 tbs lemon juice (or orange juice)
1 tsp sesame oil (veg oil would work too)
1 garlic clove, chopped
1 tsp rice vinegar (optional, taste before adding it !)
In a small bowl whisk together the marinade. Then place the chickpeas in the marinade and let it sit for a few hours or overnight.
Place a large skillet over medium heat and stir fry carrot, celery and broccoli until slightly tender and then add chickpeas and marinade to pan. Continue to cook until the sauce starts to come to a boil. Cook for 8 more minutes then serve over the brown rice and top each with a tbs of nuts. (serves two)

What makes me happy: NCIS ! seriously i use to never like that show because i only liked my gossip girl, one tree hill, all those girly kind of shows.. i then started to watch it because i didnt have a cable box in my room, and it was one of the only decent channels i had. i got hooked. I seriously want to be ducky and want gibbs to be my friend haha ! im soo obsessed but watching it always puts me in a good mood ! do you like ncis?!
