Vegan Chocolate Peanut Butter Banana Popsicles

Hey Everyone !  I have been loving this weather lately.  After my quiet beach date the other day, I sat outside the next day and finished my book.  Those few hours I now have a nice looking tan line going on.  I wore a strapless dress yesterday and seriously, it’s like nobody has ever seen tan lines before, my chest has never gotten so much attention.

Last night, me and my cousin went to a Kip Moore concert.  I love outdoor concerts in the summer, and totally wish there was some more around here.  We just set up chairs, drank some beer, and people watched.  I couldn’t help to laugh at some of the drunks there, more because I was THAT girl last concert haha #YOLO.


Half way through the concert we ended up sneaking down and ended up in the 11th row seating.  I was dieing on the inside, I wasn’t drunk enough to be doing stuff like that lol.

Today, after a beast leg workout, I had a few clients then came home to sit outside.  Wanted to work on my tan lines.  I also was so in the mood for banana soft serve.  Then again, when am I not?  So I threw a bunch of my favorite stuff in the blender, poured in into popsicle molds, and magic happened.  I mean really, eating anything in the form of a popsicle is probably good.  Though I was never a popsicle eating kid, I was the one who got that expensive cookies and creme cup from the ice cream man each time lol.  But peanut butter, banana, chocolate, how could you go wrong with these.


Chocolate Peanut Butter Banana Popsicles
3 large banana
1/2 cup peanut butter; creamy
1/2 cup almond milk
1 tbs unsweetened cocoa powder (or chocolate protein powder)
1 tbs pure maple syrup
1/4 tsp vanilla extract

Place all the ingredients in a blender and blend until smooth.  Fill popsicle molds (depends on size, mine filled 8) and place popsicle stick in middle and freeze overnight.  Once frozen, place molds under water for about 30 seconds to loosen it up (and with a knife I went around edges then they quickly popped out).  Then place in a container in the freezer until ready to serve. Enjoy!

*I got my molds at the dollar store, they are sold pretty much everywhere in the summer!

I have a date with my DVR tonight because I have a wedding to do before work tomorrow.  Seriously future brides, don’t make your weddings too early.  This means your hair and makeup has to be done at 4am, meaning your hairdresser will hate you.  Just saying.  Then going on my friends boat tomorrow night, trying to keep it low key.  Sunday I am going out east with my groupon to a winery.  Damn you groupon, your making me poor! Haha

Healthified Snickers

You win Nemo, you win.


DD has opened, after my 5th call of the day they answered and I put on my layers and trekked up snowy hills in 30+inches snow #ineedalife


Yeah 2 coffees, was needed.  On my walk it was going good trekking through a parking lot that has been plowed til I realized I had to climb these mounds of snow.  I was doing well all excited til I suck to my stomach.  Walking through it was a good ab workout though, knees to chest people.


I did have some beers with my neighbors and the power authority guys whose trucks were stuck down the street. sup boyz

I ate my body weight in anything and everything with sugar this weekend. Mad pennies in the bashing jar.

I have to go back to school tomorrow yet still can’t drive out of my street. Anxiety at it’s finest. Instead of getting to school 2 hours early tomorrow now i’ll prob get there 3 hours early. UGH. #ineedfriends


Valentines Day is Thursday I am sooo excited. Not really. But I love candy, sappy chick flicks and wine. Sounds like my Friday night but we’ll keep this to just VDay talk.


I am suppose to hang out with a newly single girlfriend and I asked her what kind of candy she wanted.  She said peanut butter cups and snickers.  Snickers?! I haven’t had one in years and totally forgot about them.  I made it my goal to make them. As you can see I had a failure.


This was just a okay looking failure the rest were just completely apart.  I would’ve just used a candy mold BUT nemo got in the way of me getting one so I had to improvise.

Ice cube trays. HOLLA


Snickers Candy- Vegenized
1c coconut oil, melted
1/2c cocoa powder
1/4c maple syrup
1c dates
3Tbs maple syrup/agave nectar
2Tbs peanut butter
2Tbs coconut oil melted
1.5 tsp Vanilla
1c peanuts

Mix the coconut oil, cocoa powder and maple syrup in a bowl til well combined and set aside.  In a high speed blender or food processor combine the dates, pb, maple syrup/agave, coconut oil and vanilla til well blended.  Add in a tbs of water if it’s needed to get things moving! Chop up your peanuts in a blender of with a chopper just enough to get them all broken up.  Spray an icetray very well.  Put atleast a tsp of the chocolate in each hole then go back and with a brush (or your finger yum) spread some more chocolate on the sides of each of the molds til covered well.  Drop in 1-1.5 tsps of the peanuts into the mold.  Top with the date mixture then covered each mold completely with the rest of the chocolate.  Freeze for an hour.  Shuffle twist and turn the icetray then they will pop out (some you might have to go over with a knife). Keep in a sealed container in the freezer for best keeping! Makes 24 icecube tray sized candies.Image

I also made some coconut mounds and plain caramel.. Caramels were my FAV one growing up, i’d push each candy to see the inside just to find the caramels.


btw dont bother trying to cut these in half, they make for horrible pics.

What makes me happy: getting out of the same pajamas i been wearing all weekend, dont judge. Even if it is to just go to school I just NEED OUT!

Vegan Mini Chocolate Filled Chocolate Donuts

Damn you Nemo and Dunkin Donuts.


For those of you who haven’t heard, Nemo is the storm hitting here soon, 30 inches of snow? Yeah why couldn’t you come during the week so I can have a snow day?! But really, since when did we start naming snow storms?  For those of you just starting to read when we got hit with Sandy and most of LI was out of gas, yeah that’s what’s going on now.  Two hours to get gas? No thanks, I rather eat donuts. People are crayy.

So why Dunkin Donuts? Because every morning I go there I have to stare at these brownie batter filled chocolate donuts. Then think all throughout the day on how I could make them at home.  I don’t have a regular donut pan just a mini and they worked out perfectly.  I am going to get a regular pan though just for these.


Chocolate Donuts

3/4 cup whole wheat pastry flour
1/4 cup cocoa powder
1/2 cup raw sugar
1 Tbs baking powder
1 flax egg (or energ-egg/real egg)
1/2 tsp vanilla
1/2 cup unsweetened almond milk
1/4 cup coconut oil, melted (canola/butter will work!)

Chocolate Filling
1 ripe avocado
1/2 very ripe banana
2 tbs cocoa powder
2 tbs maple syrup (or stevia)

Preheat oven to 400.  Combine flour, sugar, cocoa and baking powder in a bowl. Add egg, oil, milk and vanilla.  Mix until smooth.  Spoon the mixture into a donut pan filling only half way.  Blend the ingredients for the chocolate filling very well then put it onto then top of the donuts.  Top the donuts with the rest of the donut batter.  Bake 10 minutes.  Let cool for 5 minutes before taking them out of the pan.  Top with icing if you want! 2 tbs melted coconut oil (only this oil will work, butter will to!)
2 tbs cocoa powder
2 tbs maple syrup (or agave)

Mix in a small bowl, Dip donuts in and then dip in sprinkles if desired.


Perfect for a snow storm!  I am going out tonight with a friend but I am so excited to plant my butt on the couch and catch up on DVR until Monday.  Who am I kidding my school work will be right next to me and I probably won’t watch tv lol.

What makes me happy: Dressing up! Which I am tonight.  Being in school I think it would be frowned upon me wearing over the knee stilettos.  Then at work, I dress nice but I am not bringing my A game in that department because I have ruined enough of my nice clothes spilling color/bleach on them. But really how cute is this dress? I could wear this stuff everyday!

Healthiest Chocolate Chip Cookie

Hey hey hope everyones enjoying their weekend, I’m exhausted and am already looking forward to sleeping tonight – cool life lol.  I was not feeling to great this weekend, of coarse I been off for a month and go back to school this week so NOW I get sick.  Since the scratchy throat came I still tried to stick to a regimen of healthy eating and working out but at one point all I wanted was cookies, chocolate chip to be exact.  I was going to make my double chocolate chip cookies but happened to be out of oatmeal, what?! So I improvised.  I love using almond meal which is happened to work out even better for my gluten free friend who was stopping over this weekend too.. score !


Chocolate Chip Cookies
(vegan, vegetarian, gluten free)

2 cups almond flour (grind 2 cups of almonds til flour consistency)
1/2 tsp baking soda
3 tbs coconut oil, melted
1 tbs water
3 tbs maple syrup
2 tsp vanilla extract
1/2 cup chocolate chips

Preheat the oven to 325.  Mix together the almond flour, baking soda.  Then add in the vanilla, coconut oil, water and maple syrup.  Stir in the chocolate chips. Roll into 12-15 balls and bake for 10-12 minutes.  Cool on the pan for 5 minutes as they will harden up a bit! Enjoy :-)!

*If you want to or don’t like coconut oil, use butter! Just as delicious !


What makes me happy: Baking.  I love to cook but I would 100% rather serve any of my baked goods over my dinner any day.  Not that my cooking is bad just I eat some weird, unappetizing looking stuff sometimes and am a perfectionist when it comes to baking.  My baking growing up was every Saturday my sister and I, well I’d try to help I was the annoying little sister would make a box of brownies.  I’m way past that now, though they’re def good !  Once I started baking on my own I wasn’t very good, actually I was horrible.  My poor family would put on a face for me it was hilarious.  My not fully cooked brown rice pudding, or my mint chocolate chip cake that was so minty your toothpaste tasted better.  I’ve come along way since then now they ask me to make the desserts.  From the cookies and my nephews birthday being this weekend that i did alot of baking just shows how really therapeutic it is for me and I really got to start doing it more again!

holy yum. i love dessert obv, anything with chocolate count me in !

at the christmas party i had this past weekend i bought these cookies, along with the oatmeal, coconut mounds, and biscottis.. everyone raved about them and kept saying they taste like brownies just in a cookie form.. i was thinking of calling them brookies (any one tree hill fans remember that episode?!) but thought it was alittle much lol so double chocolate it is!

Double Chocolate Cookies

1/4 cup coconut oil

1 cup raw sugar

1/2 cup unsweetened applesauce (1/2 mashed banana works too)

2 tsp vanilla extract

2 cups oat flour (grind oatmeal in blender til flour like)*

2/3 cup unsweetened cocoa powder

1/2 tsp baking soda

1 cup chocolate chips

2-4 tbs nondairy milk**

Preheat oven to 350.  Mix the oil, sugar, applesauce and vanilla with a mixer.  Combine the flour, cocoa, baking soda in a separate bowl. Add flour and oil mixture until well combined then stir in chocolate chips. **If its to dry the dough add in the milk 1 tbs at a time now til it just combines and is easy to roll into balls, this dough is not suppose to be runny**.  Roll into balls and bake 8-10 minutes.  They will be soft coming out of the oven but will firm up when cool.  Makes 36-40 cookies.  Enjoy!

*Other flours I have tried has been whole wheat pastry and allpurpose and both have worked.


Coconut Mound Balls

This is alittle pass halloween but for good reason, i always make coconut cookies during the holidays for the whole “snow looking” effect, I love mound bars but the chocolate always gives me a stomach ache so i wanted to recreate my own and these are delishh ! plus there so easy to make.. i take 2-3 with me to school and eat them as a snack and they always hold me over til lunch..

i have dunked them completely in chocolate but for the holidays i wanted to keep them partially covered..

Coconut Mound Balls

1 cup unsweetened shredded coconut

4 tbs coconut oil

2 tbs maple syrup

2 tbs almond milk (water will work too)

1.5 tsp vanilla

2 tbs chocolate chips

In a bowl mix everything but the chocolate together, very well.. i use a work to get the coconut oil all mushed and mixed well.  Roll in balls and put in freezer for half hour.  Melt the chocolate and dip the bottoms then place back in the freezer til hardened. This recipe makes 12-16 depending on the size you make!

*if you want to cover the whole ball use 4tbs of chocolate and melt that then roll ball in it and use a fork or slotted spoon to take it out and get the excess chocolate off!


My nieces cant get enough of these they keep saying “i want more snow balls” I think for christmas i may dip it in chocolate partially then put christmas sprinkles on it hmm!
